Green Coffee Bean Extract contains a variety of plant constituents, including high amounts of chlorogenic acids and other polyphenols, which research has shown may be responsible for the beneficial activity of Green Coffee. While roasting gives coffee beans a distinctive flavor, color and aroma, chlorogenic acid is very bitter and breaks down when the beans are roasted. In contrast, unroasted Green Coffee Beans contain high amounts of chlorogoenic acids, the preferred beneficial plant constituent, but have little aroma and a bitter taste.
